Amy and Yngve went to Tomas Island to dive for scallops! Only 10min out we caught 70~75 scallops after our dive we set up the BBQ on Tomas Island. I ate one scallop raw and one cooked, both were delicious! The landscape and ocean are gorgeous!

We are in the Norwegian woods hunting “wild mushrooms” for christmas dinner!
Norway’s lovely forests have natural rivers and wild berries through out the woods.
We are having a have good time with locals cooking monkfish, dry lamb and crispy pork! This is my first Christmas dinner in another country!

Amy and Yngve are together cooking a Northern Lights Dinner! We are preparing exquisite dishes for 70 people!. Yngve prepared leg of lamb, roast beef, grilled salmon, pesto scallops, salty cod fish and so much more! I helped him prepare the ginger fox leg. I prepared some dishes of my own. I made a sea weed salad and some kung pao chicken that turned out to be a little too spicy for Norwegians. In all the guests enjoyed the dinner and the night ended with dancing and laughter! The dinner was a success!

Today is my last day in Norway and the first snow day in Nesna! We celebrated with a snowball fight! We are in Bear Valley enjoying delicious barbecued salmon sautéed in a chili marinade! After the meal we enjoyed a song from Yngve’s daughter! Norway was a wonderful experience! I will miss it very much!
